Sudwala’s Sweet & Spicy Coated Nuts

Recipe and Gift idea | Makes about 10 cups

We think this makes a really super and special gift when batches of these delicious Sweet & Spicy Coated Nuts are put into glass jars and decorated with a touch of Christmas flair!


  • 2 cups whole raw cashews
  • 2 cups pecan halves
  • 2 cups whole raw almonds
  • 1 1/2 cups granulated sugar
  • 4 tsp ground cinnamon
  • 1 1/2 tsp cayenne pepper
  • 1 1/2 tsp kosher salt
  • 3 large egg whites


Preheat oven to 150°C. Line 2 large baking sheets with parchment paper. Combine cashews, pecans, and almonds in a bowl.

Mix together sugar, cinnamon, cayenne, and salt in a second bowl. Whisk together egg whites and 2 tablespoons water in a third bowl until thick and frothy, about 1 minute. Add egg white mixture to nuts and stir until coated. Add sugar mixture and stir until coated. Divide nuts among prepared baking sheets, and spread in a single layer.

Bake, stirring and rotating pans halfway through, until golden brown and very fragrant, 35 to 40 minutes. Cool completely on baking sheets. Store at room temperature, in an airtight container, for up to 2 weeks.
